fried sweet plantains, just like mamí makes them

2 sweet plantains (yellow/black color)
Vegetable or canola oil for frying
Kosher salt

STEP 1
Using a sharp knife, cut a vertical slit down one side of the plantain. Then using a dull knife, push the skin back away from the flesh. The skin should easily peel off the entire plantain.

STEP 2
Cut the plantain in half horizontally. Using a sharp knife again, cut each half into long thin strips. You should get about 4-5 strips out of each half.

STEP 3
Pour enough oil in a medium-sized cast iron skillet to deep fry the plantains (about halfway up the side) and heat on high. Once the oil is hot, fry the plantain strips for 2-3 minutes, flipping over once, until they are golden brown. Remove to a paper towel-lined plate and salt. Eat immediately, preferably with rice and beans!
