pescado guisado

 

2 tablespoons neutral oil
1 yellow or white onion, diced
2 celery stalks, diced
3 garlic cloves, minced
¼ cup sazón criollo
1 caldo maggi (chicken bouillon cube)
2 tablespoons tomato paste
2 cups water (or fish stock)
4 cod fillets or another other firm white fish
2 teaspoons kosher salt
Juice of 1 lime

STEP 1
In a large skillet, heat the oil over medium-high heat. Add the onions and celery and sauté for 5 minutes, until softened. Add the garlic, sazón criollo, maggi cube, and tomato paste. Sauté another minute, then add the water and bring to a gentle boil.

STEP 2
Pat the fish dry with paper towels and season both sides with kosher salt. Add the cod to the skillet, cover and let simmer on medium-low heat for 5 minutes, or until the fish easily flakes away with a fork. Squeeze the lime juice all over the fish and serve warm with white rice. Season to taste with more salt.
