red cabbage slaw

 

½ head of red cabbage
Juice of 2 limes + 1 tablespoon lime zest
2 large orange or yellow carrots, very thinly sliced, optional
Kosher salt

Using a mandolin, shave the red cabbage (be careful!). Alternatively, you can slice it with a knife into very thin strips. Mix the cabbage and carrots, if using, in a large bowl. Add the lime juice, lime zest, and large pinch of salt. Mix well and let sit for at least 10-15 minutes before serving.
