tahini coconut granola

 

¼ cup coconut oil
3 tablespoons olive oil
¼ cup peanut butter
¼ cup tahini
2 tablespoons maple syrup
2 tablespoons honey
1 tablespoon kosher salt
¼ teaspoon fresh black pepper
4 cups old-fashioned rolled oats
2 cups raw nuts of choice - walnuts, almonds, pecans (left whole or roughly chopped)
½ cup raw seeds of choice - sunflower, pumpkin, sesame
½ cup unsweetened coconut flakes

STEP 1
Preheat the oven to 350. In a large mixing bowl, stir together the oils, peanut butter, tahini, maple syrup, honey, salt, and pepper. Add the oats, nuts, seeds, and coconut flakes; mix thoroughly.

STEP 2
Spread the mixture evenly on a large baking sheet and bake for 30-35 minutes, stirring the granola once halfway through cooking. You want the granola to be golden brown, but be mindful that it will darker in color as it sits after baking.

STEP 3
Let the granola cool, then store in a container with a lid. Enjoy for breakfast with fresh fruit or as a dessert with yogurt and an extra drizzle of honey.
