watermelon feta salad

 

½ of a seedless watermelon, cut into bite-size pieces
4 ounces feta, crumbled
½ cup black olives, pitted and cut in half , optional
Handful of mint leaves, chopped
Maldon sea salt and black pepper

Mix all of the ingredients together in a large bowl. Sprinkle with a little of the Maldon salt and a grind of pepper. Let sit for 10 minutes before serving.
