overnight french toast
8 thick-cut slices of stale bread (white, French or challah)
1 cup whole milk
5 eggs
2 tablespoons maple syrup + more for topping
½ teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon nutmeg
Pinch of kosher salt
1 tablespoon unsalted butter
½ tablespoon grapeseed oil
Fresh strawberries, sliced, for topping
Powdered sugar, for topping
The night before:
Whisk together the milk, eggs, maple syrup, baking soda, vanilla, spices, and salt in a mixing bowl. Lay the bread slices out on a sheet pan or large mixing bowl. Pour the egg mixture over the bread, cover with plastic wrap, and leave in the fridge overnight.
The morning of:
Preheat the oven to 400 and pull the bread from the fridge. Using a large deep-sided pan, heat the butter and grapeseed oil over medium heat. Add the bread slices and cook on each side until golden brown, about 2-3 minutes. Then bake in the oven for 10-12 minutes until cooked through. Top each French toast with strawberries, a dusting of powdered sugar, and more maple syrup.
