simple vinaigrette

 

1 tablespoon Dijon mustard
1 tablespoon vinegar of choice - sherry, white, balsamic, red wine, etc.
1 teaspoon fig preserves or honey
¼ cup extra-virgin olive oil
Squeeze of lemon juice
Pinch of kosher salt

STEP 1
Put the mustard in a tall cup or measuring cup (you want something with a narrow base). Add the vinegar to the mustard and mix with a spoon or small whisk. Add the preserves or honey and pinch of salt. Squeeze a little lemon juice to the mixture; whisk together.

STEP 2
Slowly start pouring the olive oil into the cup while constantly whisking. Add enough olive oil for your desired texture and volume. It should be a little thick. Taste and season with more salt if needed.

FYI: This vinaigrette is perfect for any salad or with cooked French lentils, boiled potatoes, in a good baguette stuffed with ham, cheese, and cornichons … the options are endless.
